For your cozy meal, you will need not as many items as you might think. Gather a quart of chicken broth, a quart of water, one tablespoon of poultry seasoning, one bay leaf, and one-to-one and ½ boneless skinless chicken breast. Plus salt and pepper to taste.
For the soup part, you can make or buy chicken broth. You can also substitute the poultry seasoning for Italian seasoning.
For your dumplings, gather two cups of all-purpose flour, three teaspoons of baking powder, ¾ cup of milk, ⅓ cup of vegetable oil, and salt and pepper.
Add your water and chicken broth into a seven-quart Dutch oven and place over medium heat. Add poultry/Italian seasoning, bay leaf, and chicken breast. Cover until cooked all the way through. Remove meat and place to the side to cool and then skim any foam from the broth. When meat is cool to the touch, shred roughly into bigger pieces. Add chicken back into the pot and let simmer, add salt and pepper to taste.
Start on the dumplings by mixing the flour and baking powder together, then mix the milk and vegetable oil. Pour over the flour mixture while using a fork to incorporate it. Stop mixing when the dough comes together and use the fork to add 12 golf ball-sized dumplings to the pan. Sprinkle with salt and pepper and let simmer. Finally, cover and let cook for 10 to 12 minutes.
Time Saving Tips
To save you some time but to still have a delicious meal, here are some tips from Little Home Big Alaska. You can start with pre-cooked chicken or white meat from a rotisserie chicken. Canned chicken is discouraged. You could also cook your chicken in the instant pot, then shred and place it in a dutch oven with broth, water, and herbs. You would then reduce the heat and add in the dumplings. You could also use two quarts of chicken broth to avoid making a semi-homemade one.

If your dumplings seem to miss the mark on fluffy every time, you might be overmixing them. Stop mixing as soon as the dough comes together in the bowl. Also, instead of rolling the dough into balls, drop spoonfuls into simmering broth for fluffy dumplings.
To keep your dumplings from falling apart, your broth must be simmering hot when the dumpling touches it.
